చికెన్ బిర్యానీ - సులభమయిన ఉలవచారు - ఉలవచారుబిర్యానీ తయారీ విధానం - Chicken ulava Charu Biryani
Ulavacharu
Ingredients:-
Horse Gram (black and white) - 1 cup each
Onion (chopped) - 1
Curry leaves - 2 sprigs
Cumin powder - 1 tsp
Red chilli powder - 2 tsp
Tamarind juice - 1 cup
Jaggery- 1 tb spn
Oil - As Required
Salt - To Taste
Water - As Required

Method:-
Soak the Horse gram for atleast few hours and pressure cook them for 10 whistles and mash it and strain the juices and keep it aside.
Take a pan add oil, chopped onion , salt and curry leaves and sauté it till oil onions turn golden brown. Now add Cumin powder, Red chilli powder and Tamarind juice and add Whey water of horse gram. Now add 1 tb spn of jaggery. Now strain and keep aside .
Tasty Ulavacharu is ready to serve.

Ulavacharu Chicken Biryani
Ingredients:-

→ Salt - to taste.
→ Ginger garlic paste - 1 tablespoon.
→ Cumin powder - 1 tea spoon.
→ Coriander powder - 1 tablespoon.
→ Red chili powder - 2 tablespoons.
→ Golden fried onions - 1/2 cup.
→ Biryani phool - 1 tea spoon.
→ Shahi jeera - 1 tea spoon.
→ Cardamom - 9 numbers.
→ Cloves - 10 numbers.
→ Cinnamon sticks - 2 numbers.
→ Star anise - 2 numbers.
→ Bay leaf - 2 numbers.
→ Basmati rice - 2 cups
→ Chicken - 500grams.
→ Yogurt - 1 cup.
→ Coriander leaves (chopped) - 1 bunch.
→ Green chilies (chopped) - 5 numbers.
→ Oil - 2 tb spn
→ Lime juice - 2 tablespoons.

Method:-
Marinate the chicken with above masalas and marinate for atleast 3 hours
Heat water in a vessel and let it come to a boil add oil, salt, whole Garam masala
Once it comes to boil, add basmati rice (soak the rice for 1 hour) cook the rice till 75 % done.
Then in another pan, add a layer of marinated chicken and add Ulavacharu and layer the rice on top of ut
Sprinkle fried onions, and add dissolved saffron strands in milk.
First, cook it on high for first 10 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 30 minutes and switch off the flame.
