INGREDIENTS
3 cups (600 g) cooked long grain rice
1 lb chicken breast
1 small to medium (53 g) carrot
1 to 2 tsp (9 mL) dark soy sauce
1 to to 2 tsp (9 mL) sesame oil
1/2 cup (23 g) scallion greens
2 Tbsp (9 g) scallion whites

FOR THE MARINADE
1 Tbsp (15 mL) soy sauce
1 Tbsp (15 mL) mirin
2 cloves (8 g) minced garlic
2 tsp (5 g) minced fresh ginger
2 Tbsp (9 g) whites of scallions
1/3 cup (79 mL) fresh pineapple juice
1/4 tsp white pepper
