Taking a day to cook for friends and family and enjoying every minute of the silence in this slower paced, relaxing prep session. It's the best way to work IMO, sometimes with some music on but generally the hum of the kitchen is a welcome soothing sound to get lost in. Cooking is my sweet spot, some call it the zone, where thoughts calm, things become clear and actions take over.

This Cacciatore prepared with Homemade, Slow Cooked Nana's Red Sauce is packed with loads of Veggies, King Oyster Mushrooms and Brown Oyster Mushrooms each cooked to perfection their own way and simmered together for hours for a delicious, heart warming, perfect bowl of slow tf down and enjoy life. Nana used to cook with me growing up and it'd take all day, every day, being in the kitchen meant comfort and good eats and we spent most our time together there. Such fond memories. x

This recipe and process made more than 20 full size servings, served with pasta.

Slow cook Red Sauce:
Plum tomatoes, the bigger cans
Carrots
Celery
Onion
Lots of garlic
Great Olive Oil
Bay Leaves
Flake Salt
Ground white and black pepper, toasted and freshly ground
Fresh Oregano

Seasoned Veggie & Mushroom additions:
Cauliflower - blanched and roasted
Zucchini/Courgette - pan roasted
Cabbage - seared and roasted
Brown Oyster - press roasted crispy
King Oyster - pulled and pan roasted
Multi colored Bell Peppers - pan roasted
Artichoke hearts
Chick Peas

Prepare sauce:
Dice onions, carrots, celery, garlic and saute-sweat in a good amount of olive oil until cooked thoroughly. Blend until smooth. Add in plum tomatoes, splash of water and some red wine if you care too.

Prep Veg as we do here or if short on time you can just add in after butchered. By cooking each individually as we do here allows for much more flavor to build and layer that adds a complexity that comes across as very simple and delicious. This is the way.
