Preps: have all the ingredients in room temperature

Note: Please DOUBLE the amount of the custard cream if you want all your puffs to be filled with it.

Crispy cookie:
unsalted butter 35g
caster sugar 30g
flour 45g

Custard cream:
egg yolk 1
sugar 25g
milk 110g
corn starch(or cake flour) 8g
vanilla pod(or essence 1tb) 2-3cm
whipping cream 100g(plus sugar 8g)

Puff pastry:
unsalted butter 25g
milk 60g
a pinch of salt & sugar
cake flour 40g
egg 2

準備工作:將所有材料放置室溫

注意:請將卡士達醬的材料加倍,才能將所有泡芙都裝滿喔!

餅乾脆皮:
無鹽奶油 35g
細砂糖 30g
低筋麵粉 45g

卡士達醬:
蛋黃 1顆
砂糖 25g
牛奶 110g
玉米澱粉(或低筋麵粉) 8g
香草豆莢(或香草精1小匙) 2-3cm
動物性鮮奶油(加糖8克) 100g

泡芙麵糊:
無鹽奶油 25g
牛奶 60g
低筋麵粉 40g
糖和鹽 各1小撮
蛋 2顆
