I was feeling like making cookies and had some date syrup lying around, so I thought, why not? So I decided to whip up a batch of cookies with this deliciously sweet natural syrup. Ingredients
100 gr. butter, softened
150 gr. date syrup
1 egg
200 gr. flour
1 tsp. ground cinnamon (or a bit more if desired)
1 tsp. baking powder
1/2 tsp. baking soda
80 gr. chopped chocolate

Instructions
-Beat the softened butter with the date syrup until the mixture becomes lighter in color and fluffy.
-Add the egg and ground cinnamon to the mixture and beat for about 30 seconds until well combined.
-In a separate bowl, mix together the flour, baking powder, and baking soda. Gradually add the dry ingredients to the wet mixture, mixing until just combined to form a dough. Be careful not to overmix to prevent the butter from melting.
-Fold in the chopped chocolate until evenly distributed.
-Using an ice cream scoop, place dough balls onto a baking sheet lined with parchment paper, spacing them apart. Slightly flatten each dough ball with your hand or a spoon.
-Refrigerate the baking sheet with the dough balls for 15-20 minutes to firm up the dough.
-Preheat your oven to 170°C (340°F). Bake the cookies for 10-12 minutes until the edges are golden brown and the centers are set.
-Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
