For Dough:
2 cups whole wheat flour (atta)
1 tsp salt
1 tsp oil/ghee
½ – ¾ cup water (as needed)
For Stuffing:
1 cup fresh spinach (finely chopped)
½ cup grated paneer (about 100 g)
1 green chili (finely chopped, optional)
2 tbsp fresh coriander leaves (chopped)
½ tsp cumin powder
½ tsp garam masala
¼ tsp red chili powder (optional)
Salt to taste
For Cooking:
Ghee or oil – as needed

Prepare Dough – Mix wheat flour, salt, and oil. Add water gradually to make a soft dough. Cover and rest for 20 minutes.
Make Stuffing – In a bowl, combine spinach, grated paneer, chili, coriander, and spices. Mix well.
Shape Parathas – Roll out a dough ball, place stuffing inside, seal edges, and roll gently into a flat roti.
Cook Parathas – Heat a pan, cook each side with a little ghee/oil until golden brown spots appear.
Serve Hot – Enjoy with yogurt, chutney, or pickle.
