in this video I cook up one of my favourite things which is pork with crackling I've been cooking this a lot lately on different bbqs to try and get some amazing crackling.

Ingredients

2kg pork leg with skin on
200g fresh bread crumbs
3 tsp dried sage
1 tbsp butter
1 medium onion (grated)
Milk
Salt & pepper

Method

Score the skin then cut the pork to open it up flat, then get a pan over the heat around 150c and soften the onions in the butter then add the sage and bread crumbs mix well, add milk a little at a time till stuffing consistency, take off the heat and let cool.

Bring the Kamado joe up to 230c and add your deflectors and grate back in, spread the stuffing on to the pork then roll it up and use butchers twine to tie it up, dry the skin and rub salt in, get it onto the Kamadojoe, give it 30/40 minutes then lower the temp to 180/190c and let cook until you have the ultimate crackling and the pork hits 74c internal.
