Ambila Recipe ( Odia ) : Ambila is a semi-thin and mild sour curry originated from Western-Odisha. This super healthy and delicious Ambila is prepared with vegetables , rice batter , curd or tamarind or sundried Mango. But, here I have shown the Ambila using Curd. So , must try it at home . Enjoy with plain rice :)

Ingredients :
1. Diced Pumpkin ( Kakharu ) - 250 gm
2. Diced Brinjal ( Baigana ) - 1no.
3. Diced Radish ( Mula ) - 1 no.
4. Okra/ Ladies finger ( Bhendi ) - ( 3-4nos. )
5. Thick Curd - 3 tbsp ( you can add more or less )
6. Raw Rice - 1 palmful ( soak for 2 hours )
7. Green Chilli - 2 nos.
8. Garlic cloves - 4 nos.
9. Dry Red Chilli - 3 nos.
10. Panch Phoron ( Pancha Phutana ) - 1 tbsp ( cumin seeds + mustard seeds + Black cumin seeds + Fenugreek seeds + Saunf )
11. Fresh Curry Leaves - 2 stem
12. Crushed Garlic - ( 8-10 cloves _
13. Diced Tomato - ( 2-3 nos. )
14. Turmeric Powder - 1 tbsp
15. Salt to taste
16. Mustard Oil - 2 tbsp
17. Water - 2 glass ( or as required )
