TikTok made me do it! This SUSHI BAKE is like cooked deconstructed sushi. No rolling required. If you don't like crab, try it with salmon, scallops, shrimp, lobster or any seafood combination you enjoy! This dish reheats well but best hot outta the oven!

INGREDIENTS (using a 7x11 deep baking dish, serves 4-6)

RICE:
3 cups cooked rice
1 and 1/2 tablespoons seasoned rice vinegar
1/4 teaspoon salt

CRAB MIXTURE:
3oz cream cheese (measured from the package)
1/4 cup kewpie mayonnaise
1 tablespoon sriracha
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon onion powder
A few shakes of garlic powder (optional)
2.5 cups (pre cooked) crab; i used a combination of imitation and lump crab
1/4 cup tobiko
Furikake to taste

EEL SAUCE:
1/4 cup low sodium soy sauce
1/4 cup mirin
2 tablespoons sugar (i used 1.5 because i don't like it too sweet)
1 tablespoon sake
