Ingredients:

Dal with Eggplant:
200 g Chana Dal
2 Chinese Eggplant
1 Onion (Medium)
1 Tomato
3 - 5 Curry Leaves
1/4 TSP Fenugreek Seeds
1/2 TSP Mustard Seeds
1/2 TSP Cumin Seeds
2 TSP Curry Powder (Masala)
1 TSP Garlic Paste
1 TSP Ginger Paste
2 TSP Tamarind paste
3 TBSP Oil
Coriander to Garnish
Salt to taste (Note 1)

Sautéed Pumpkin (Touffé Giromon)

1 Kg Pumpkin
1 Onion
1 Garlic Clove
2 Dry Chillies
5 - 6 Curry Leaves
4 Sprigs of Thyme
1/2 TSP Fenugreek Seeds
1/2 TSP Mustard Seeds
3 TBSP Oil
Salt to Taste
Pinch of sugar (Optional)

Potato Curry:
3 Potatoes (Medium)
1 Onion (Medium)
5 Curry Leaves
1 Tomato
1/2 TSP Ginger Paste
1/2 TSP Garlic Paste
1/4 TSP Fenugreek Seeds
1/2 TSP Mustard Seeds
1/2 TSP Cumin Seeds
1 TBSP Curry Powder (Masala)
Coriander to Garnish
3 TBSP Oil
Salt to taste

Note:

In Tamil 7 curries, the process is simple. All the curries you need to add fenugreek, mustard and cumin seeds.

Note 1 - For salt - We can only provide an estimated amount since your measurement may vary and also it depends on your taste as well.
For beginners - start adding 1/2 TSP of salt and the taste the food. If needed add 1/4 TSP. Normally for these curries, we used around 1 TSP of salt.
It is always recommended to add salt when the curries are almost done cooking. As the quantity of the vegetables will reduce while cooking.

How to plan your cooking time?
1. Wash all the vegetables, and cut them. (put potatoes in water, and pumpkin if not cooking immediately.
2. On a plate, place the chopped onion & tomatoes, curry leaves, ginger & garlic paste and coriander to garnish.
3.Place all the spices on a plate - fenugreek, mustard, cumin seeds and masala.
4. Depending on your stove - 2 or 3 burner. You can do more than 2 curries at a time.
In which order to make the curry?
1. Boil Banana & Jackfruit (if you are using fresh jackfruit)
2. Boil potatoes(can also use a pot instead of pressure cooker)
3. Sauté jackfruit with the spices
4. Sauté potatoes with the spices
5. Sauté green Beans with the spices
While the curries are cooking, grate the bananas.
Once the curries are cooked. Boil the dal and sauté the eggplant.
6. Sauté grated banana with spices.
6. Sauté dal & eggplant with spices.
7. Sauté pumpkin with the spices.
