Thanks to the idea given by a follower, I experimented with my keto coconut wrap recipe as the flat pasta for this keto lasagna. I must say that it turned out so amazing as it tastes like the real deal. In fact, this keto flat pasta is even better than regular ones as it doesn't turn soggy even after re-heating. Carb eaters commented that they couldn't tell the difference with regular lasagna which is awesome.

In this video, I showed you how to make the flat pasta using the same method as the coconut wrap recipe except cutting them into squares to fit the baking dish. You could also bake them in the oven if you do not want to cook them in a pan over the stove. The size of the flat pasta depends on the size of the baking dish that you're using. I am using a 7x7" baking dish but I cut the dough 1" bigger as they do shrink after cooking. This recipe makes about 4 pieces of 8x8" squares of flat pasta so you can adjust accordingly.

If you have store bought low carb marinara sauce, then it would be convenient to use them. If not, I have provided the recipe below so you can easily make them at home. I will be showing you more ways that you could use this popular keto coconut wrap to make other delicious dishes so stay tuned.

Total servings = 6
Per serving;
Net carb = 9 g
Calories = 338
Total Fat = 15.6 g

INGREDIENTS
For Flat Pasta;
Coconut flour = 120 g / 1 cup
Psyllium Husk Powder (Finely Ground) = 18 g / 2 tbsp.
Salt = 1 tsp
Optional = 1 tsp each of Italian seasoning, garlic powder & onion powder
Coconut / Olive oil = 30 ml / 2 tbsp
Boiling water = 480 ml / 2 cups

DIRECTIONS
1. In a bowl, mix all the dry ingredients together until well combined and no lumps.
2. Add the wet ingredients and mix until it becomes a dough.
3. Knead the dough for 1 min. If the dough is too hot, just cool it for a bit before kneading.
4. Divide the dough into 2 portions.
5. Place 1 portion of the dough on a parchment paper. Cover with another layer of parchment paper and flatten the dough with hand. Then roll the dough with rolling pin into a thin layer and cut into 8x8" squares. This size is to fit into a 7x7" baking dish. If you're using a different sized baking dish, please adjust accordingly. However, please cut the dough into 1 inch bigger as it will shrink after cooking.
6. Cook the flat pasta on a non-stick pan over medium high heat for about 2 mins each side or until slightly browned.
7. Cut each flat pasta into 4 smaller squares and set aside.

For Fillings;
Minced beef = 600 g
Yellow onion (chopped) = 1/2
Tomato paste = 1 to 2 tbsp. (optional)
Salt & Pepper = to taste

For Marinara Sauce;
You can use store bought low carb marinara sauce or make the sauce as follows;
Pure tomato puree = 500 g (Sorry for typo error of 800 g instead of 500 g in video)
Olive oil = 1/4 cup
Black Pepper = 1 tsp
Red Pepper flakes = 2 to 4 tsp
Onion Powder =1 tsp
Garlic Powder = 1 tsp
Oregano Powder = 1 tsp
Dried Basil = 1 tsp
Dried Parsley = 1 tsp
Salt =1 to 2 tsp (adjust taste accordingly)
[ Mix all ingredients together ]

DIRECTIONS
1. In a pan, stir fry the onions with some cooking oil until fragrant. Add tomato paste and mix.
2. Add minced beef, seasonings and stir fry until almost cooked then add the marinara sauce and cook through. If the sauce is too dry, just add some water. Adjust taste accordingly. Dish into a bowl.

For Topping;
Grated mozzarella cheese = 300 g
Grated parmesan cheese = 80 g

ASSEMBLE THE LASAGNA
1. Pre heat oven at 350F or 180C.
2. Spoon some fillings onto the bottom of dish.
3. Top with a layer of flat pasta.
4. Top with fillings.
5. Top with mozzarella cheese.
6. Repeat with the layering.
7. Finish with the fillings on top layer and sprinkle with grated parmesan cheese.
8. Bake for about 20 to 30 mins until the cheese has melted.
