UBE CHEESE ENSAYMADA
✔️Dough
3 tbsp sugar [38 grams]
2 tsp instant dry yeast [6 grams
1 whole large egg [60 grams]
1 cup fresh milk (lukewarm) [240 ml]
1 tbsp ube flavoring [ 15 ml]
3 cups bread flour [405 grams]
1/2 tsp salt [3 grams]
3 tbsp unsalted butter [45 grams]
*Ube (Purple Yam) halaya /jam (for filling)

✔️Topping
3/4 cup powdered sugar [95 grams]
3/4 cup unsalted butter [170 grams]
1/4 cup all purpose cream (chilled) [60 grams]
1/2 tsp vanilla extract [2.5 ml]

YIELD: 18 pieces , 45 grams each (excluding the filling)
MOLDER SIZE: 3.75 inch (top) , 2.5 inch (base)

NOTE:
1. Bread flour can be replaced by all purpose flour for this recipe. Dough consistency might not exactly match due to the difference of protein content & the amount of gluten formed from each flour, though the softness of the bread is still achievable.
2. If dough turned too sticky when kneading, may sprinkle some flour or grease the dough/work surface with oil. As much as possible, do not add flour to the dough when kneading to get rid of its stickiness. Adding too much flour may lead to a dry & dense dough. May use slap & fold kneading method as well to resist the dough's stickiness.
3. Approx. kneading time for this dough would take 5 to 7 minutes only. Proceed to proofing after kneading the dough for 5-7 mins. regardless of the windowpane. Avoid over kneading.
4. Baking time may vary on the type & function setting of the oven. I used conventional type oven with bottom heat function only.
