15 Mins Rasam Rice | Easy Lunch & Dinner Recipe | Comfort food | One Pot Meal
Ingredients-
Cooking oil/Ghee- 1 tbsp
Mustard seeds- 1 tsp
Cumin seeds- 1 tsp
Asafoetida- 1/2 tsp
Solid pepper- 1 tsp
Curry leaves- 1 sprig
Bay leaf- 1
Garlic pods- 7-8
Solid red chillies- 2
Onion- 1
Tomatoes- 2
Turmeric powder- 1 tsp
Coriander powder- 1 tsp
Red chilli powder- 1 tsp
Rasam powder/Sambar powder- 2 tsp
Salt- 2 tsp
Rice- 1/2 cup
Arhar/Toor dal- 1/2 cup
Water- 4 cups
Clarified butter/Ghee- 1 tbsp
Tamarind- lemon sized
Jaggery- lemon sized
Fresh coriander- handful
Serve hot with appam/papad & pickle
Directions:
1. In a pressure cooker, heat cooking oil and add mustard seeds, cumin seeds, asafoetida, whole black pepper, curry leaves, bay leaf, garlic pods, whole red chilies, and chopped onions. Sauté for two minutes.
2. Add chopped tomatoes and sauté for another two minutes. Then, add turmeric powder, coriander powder, red chili powder, salt, and rasam or sambar powder. Sauté for two more minutes until aromatic.
3. Add soaked rice, dal, and water. Mix well, close the lid, and cook for 2–3 whistles.
4. Once the pressure is released, open the cooker and add tamarind juice, jaggery, and fresh coriander. Mix well.
5. Serve hot with appalam/papad and pickle.
