These are delicious, crisp and chewy. The next day we noticed it wasn't as crispy, and more chewy

1 lb container Hanalei Poi
1½ c. sugar
18 oz mochiko flour (1¼ box)
1½ – 2 c. of water
2 c. canola oil (for frying)

Directions:
Mix poi and sugar together. Add mochiko flour slowly while adding the water. Continue adding water until the batter is like a thick pancake batter. Heat oil in pot until hot. Drop a small cookie-scoop full of batter into hot oil. Fry until golden brown. Drain on paper towels and serve warm. Makes 30 pieces.
