材料配方 Ingredients:(10個 / 10 pieces)
撻皮Tart shells:
無鹽奶油(軟化)80克 / Unsalted butter (softened) 80g
糖粉 30克 / Icing sugar 30g
煉乳5克 / Condensed milk 5g
鷄蛋 (室溫)20g / Whole egg (room temperature) 20g
低筋麵粉 170克 / Cake flour 170g

蛋液Egg mixture:
鷄蛋 20克 / Whole egg 20g
蛋黃 2個 / Egg yolk 2pieces
細砂糖 50克 / Castor sugar 50g
鮮奶 75克 / Milk 75g
淡奶油 150克 / Whipping cream 150g

製作步驟 :
1.將無鹽奶油用打蛋器攪打軟化均匀, 然後加入糖粉攪拌均匀至糖粉融化。 混匀之後它會像膏狀有點半透明。
2.加入煉乳攪拌混匀,然後加入鷄蛋繼續攪拌混匀, 之後加入過篩的低筋麵粉混匀至沒有顆粒。切記不要過度攪拌以免麵粉起筋。
3.將麵團包上保鮮膜,放入冰箱冷藏1小時。
4.將鷄蛋,蛋黃和細砂糖放入碗裏攪拌混匀,然後加入鮮奶混匀,之後加入淡奶油混匀。將麵糊蓋上保鮮膜,放入冰箱冷藏30分鐘。
5.將麵團取出,分割成10等份(每份大約32克)。取出一份麵團,用手指輕輕按壓入撻模中。
6.將蛋液從冰箱取出,攪拌混匀,然後將蛋液過篩,之後倒入撻皮里。
7.放入已預熱的烤箱200攝氏度,烘烤20-25分鐘或呈現淺棕色(每一台的烤箱不同,請大家自己斟酌烤箱温度与時間)。將布丁撻取出,轉移到凉架上放涼。香酥的撻皮,外酥内滑,每一口都很香很滿足。剛出爐溫熱吃或冷藏后都很好吃,各都有不同的風味。做法及材料簡單,攪一攪拌一拌就搞定!

Instructions:
1.Beat the unsalted butter until soften , then add icing sugar and mix well until it will become translucent like a paste.
2.Add condensed milk and mix well, then add egg and continue to mix well. Add cake flour through a sieve and mix well until there are no particles to be seen in the batter. Remember do not over stirring the batter as to avoid gluten in the flour.
3.Wrap the dough with plastic wrap and put it in the refrigerator for 1hour.
4.Put the egg, egg yolks and castor sugar into a bowl and stir well, then add milk and mix well. Add the whipping cream to the mixture and continue to mix well. Cover the batter with plastic wrap and refrigerate for 30 minutes.
5.Take out the dough and divide it into 10 equal portions (32g each). Take out a portion of dough and gently press the dough with your fingers tips into the tart mold.
6.Take the egg mixture out from the refrigerator and mix well. Sieve the egg mixture, then pour the egg mixture into the tarts.
7.Preheat the oven to 200°C and bake for 20-25 minutes or until golden brown (Each oven is different, you may adjust the oven temperature and time). Remove the pudding tarts out from the oven, transfer to the cooling rack and let it cool completely. The tart is crispy and smooth and tender on the inside. Every bite is fragrant and satisfying. They are delicious when it is warm or chilled, each with a different flavor. The method and ingredients of making this pudding tarts are simple, just stir and it’s done!
