Hey family!!! In today's video we're cooking two cowboy/western style chicken casseroles!

INGREDIENTS
1 cup Water warm
3 and 1/4 cups White Flour
1/4 cup Sugar
1 tablespoon Active Dry Yeast or yeast packet
1 Egg
2 tablespoons Butter
1 teaspoon Salt

INSTRUCTIONS
Combine all ingredients (except for 1/4 cup of flour) in the bowl of a stand mixer and mix using a dough hook on low until combined.
(NOTE: I like to mix the yeast and warm water first while I'm getting everything else ready. For some reason the rolls seem to do better when I do that.)
Continue mixing about 5 minutes, gradually adding in the last cup of flour. Dough will be soft and just slightly sticky.
Turn out dough onto floured surface and knead two or three times, patting into ball shape.
Cover with kitchen towel and let rise 60-90 minutes, until doubled.
Turn onto floured surface and divide into 16 pieces. Shape into balls.
Place in greased 9x13 pan and cover with towel, allow to rise 45 minutes, until puffed.
Bake at 350 degrees for 15-20 minutes, until tops are golden brown.


Cowboy Chicken Casserole:

INGREDIENTS: NOTE: I made more in this video, but this is the original recipe. 😊👍
2 lbs chicken breast boneless, skinless
1 cup black beans drained and rinsed
1 cup black eyed peas drained and rinsed
1 cup canned fire roasted tomatoes drained
1/2 cup corn kernals canned or frozen
1/2 cup bell pepper diced
1/4 cup sweet onion diced
1/4 cup diced jarred jalapeños optional
3 cloves fresh garlic pressed

1 cup colby jack cheese shredded
2 tbsp fresh lime juice about 1 lime
1 tbsp cilantro optional

Directions:
Lay the chicken breast flat in a casserole dish, then sprinkle 1 tbsp of the italian dressing seasoning over the top.
In a bowl, mix the black beans, black eyed peas, fire roasted tomatoes, corn, onion, bell pepper, garlic, oil, lime juice, and the remaining 1 tbsp dressing mix until combined.
Spread the bean mixture over the seasoned chicken. Bake uncovered on the middle rack at 375˚F for 45-55 minutes or until the chicken is cooked through (internal temp 165˚F)
5 minutes before the baking is finished, remove the dish and cover the top evenly with cheese and return to the oven to cook until done.


BBQ Chicken Casserole:

INGREDIENTS
4 cups chicken shredded
1 cup black beans drained and rinsed
1 cup sweet kernel corn canned or frozen
1/2 green pepper finely diced
1 cup barbecue sauce
1 cup sharp cheddar cheese shredded
1/2 cup french fried onions
Garnish (optional)
2 tbsp cilantro chopped

INSTRUCTIONS
Mix the shredded chicken, black beans, corn, green pepper, and barbecue sauce until combined.
Pour mixture into a large casserole dish and top with cheddar cheese.
Place the dish in the oven loosely covered with foil and bake at 375˚F for 25 minutes.
Remove the foil and top with french fried onions and continue to cook for 10 more minutes or until the sides are bubbling and the onions are browned.
Let rest for 5 minutes, then garnish with cilantro. Enjoy!
