How to Make Crispy Chilli Beef 2021 - The Crispiest Tastiest Chilli Beef

Tender strips of beef in a light, crispy, crunchy coating, smothered in just the right amount of sticky-sweet, tangy, spicy sauce.
Few things in life are better than this, which is why crispy chilli beef is one of the most popular Chinese restaurant, takeaway/takeout dishes in the world.

It’s one of those dishes that isn’t that easy to figure out how to make right, but if you follow my tutorial, it’s actually quite simple.
And if you make this for your friends and family you are guaranteed to impress them.
There are quite a few ingredients and processes to follow and I’ve shown you how I make a proper base for the sweet chilli sauce for that extra flavour rather than just the ketchup method (although it still involves a little ketchup lol!). It’s definitely worth it though.

For 3-4 people you will need
350g of beef - rump/sirloin/medallion steak

Velveting
1/2 tsp of sodium bicarbonate
1 tsp of cornflour/cornstarch

Marinade
1 tbsp light soy
1tbsp sesame oil
1 tsp sugar

The crispy coating
1 large free range egg
200g of cornflour/cornstarch
3 generous pinches of salt
1 pinch of pepper

The sweet chilli sauce
1/2 a pepper
A small chunk of fresh ginger
1/2 a white onion
1 lemon
2 tomatoes
200 ml of plain water
5 tbsp of sugar
8 tbsp of malt vinegar
2 tbsp of ketchup
A pinch of salt

Finishing
1/4 of a white onion
1 -2 fresh hot chilli peppers to taste
1 small chunk of ginger (think dice sized)
3 garlic cloves
3 tbsp of brown sauce/A1 steak sauce
1 tbsp honey
A pinch of salt
1 tbsp of cornflour/cornstarch in water (slurry) for thickening

You will also need approx 1 litre of cooking oil for shallow and deep frying
A big pan for deep frying
A wok/ high sided frying pan/saute pan or similar for stir frying
A frying basket or ’spider’ would also be useful
