Chinese style Fried Rice | Riz frit au poulet | Mauritian Recipe

This chicken fried rice has moist and tender chicken, shrimps with colourful vegetables and there are green onions, garlic, sesame oil, and soy sauce for layers of flavour with long cooked rice. This recipe will give you Authentic Chinese taste just like Chinese takeout Fried rice.

Serves: 3-4 persons

Ingredients:
Chicken Seasoning
200g Chicken breast
1 TSP Soy Sauce
1 TSP Oyster Sauce
Pepper to taste
1/4 TSP Garlic
1/2 TSP Oil

Shrimps Seasoning:
100g Tiger Shrimps
Salt & pepper to taste

Eggs Seasoning:
3 Eggs
Salt as per taste

Other Ingredients:
1/2 cup diced Carrot
1/2 cup Peas
1/2 cup Corn
3 Garlic Cloves
3 cups Cooked Basmati/Jasmin Rice (600g)
1 TBSP Fish Sauce
1.5 TBSP Soy Sauce
1 TBSP Rice wine vinegar (can substitute with garlic sauce)
1/4 White Pepper
1 TSP Sugar
1 TSP Sesame Oil
1/2 cup Spring Onion (chopped)

Notes:
Cold Rice: To make the best rice you have to plan a little bit ahead of time. Chilled cooked rice is the best way to use up left over rice as well as fried rice. Rice that is cooked and still warm does not cook well when making fried rice. It tends to turn out mushy and very sticky. In this video we cooked more than 200g of Basmati rice.

High Heat: It is best to cook on high heat to help fry and brown the rice and veggies throughly. Try not to have the rice steam in the pan or stick together too much. Stir frequently.

Substitute for Fish sauce and Rice wine vinegar - you can use oyster sauce and garlic sauce. Another great substitute is Chicken powder. It will give the fried rice a lot of flavours.
