I made a vegetarian topping for this dish. The main ingredients are mushrooms, soy protein, and konjac, and it came out fantastic. Of course you can use this topping to pair with any type of noodles, or even rice. They are all very delicious.
我特地为这款酸辣粉制作了素炸酱,主料运用菌菇、大豆蛋白、魔芋来制作,成品和肉版炸酱还有点傻傻分不清,当然你可以用它制作炸酱面都是非常美味的。

Ingredients/材料:

炸酱部分/Topping:
大豆蛋白 200g(或者用腐竹)200g Soy Protein (You can use yuba or tofu)
胡萝卜 半根 Half Carrot
杏鲍菇 半根 Half King Oyster Mushroom
香菇 两个 Two Shiitake Mushrooms
魔芋 120g Konjac

炸酱调味料/Seasoning For Topping:
无添加黄豆酱 两大匙 2Tbsp Soybean Paste
郫县豆瓣酱 一大匙 1Tbsp Doubanjiang (Sichuan Style Spicy Bean paste)
赤砂糖 一大匙 1Tbsp Brown Sugar
腰果粉 25g Cashew Powder
海盐 适量 Sea Salt
水淀粉 适量 Slurry
水 适量 Water

酸辣粉调味料/Seasoning for Noodle:
油辣子 一大匙 1 Tbsp Chili Oil
生抽 一大匙 1Tbsp Soy Sauce
香醋 一大匙 1Tbsp Black vinegar (Chinkiang vinegar)
赤砂糖 1/2小匙 1/2 Tsp Brown Sugar
花椒油 1/2小匙 1/2 Sichuan Green Pepper Oil
香油 一小匙 1Tsp Sesame Oil
花椒面 1/4小匙 1/4 Tsp Crushed Sichuan Pepper
香菜 两大匙 2Tsp Coriander
酥黄豆 两大匙 2Tbsp Crispy Soybeans
原味榨菜 一大匙 1 Tbsp Zacai (Pickled Mustard)
