Ingredients:
For the cupcakes:
1/2 cup (115g) Butter, softened
1/2 cup + 2 tablespoons (125g) Sugar
2 Eggs, large
1/2 cup (120ml) Buttermilk/milk
1/4 cup (60ml) Oil
1 teaspoon Vanilla extract
1¼ cups (156g) Flour
3/4 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
1/2 cup (120ml) Strong coffee
For the frosting:
1 cup (225g) Mascarpone
1 cup (240ml) Heavy cream
2/3 cup (78g) Powdered sugar
1 teaspoon Vanilla bean paste
3-4 tablespoons Vanilla pudding (optional)
For dusting:
Cocoa powder

Directions:
1. Make the cupcakes: Preheat oven to 350F (180C).
2. In a large bowl, beat butter and sugar until smooth. Add eggs, one at the time, beating until combined after each addition. Add oil, vanilla extract, buttermilk and beat until combined.
3. Sift in flour, baking powder, baking soda and salt. Mix until well combined.
4. Scoop the batter into the cupcake liners, about 3/4 of the way full.
5. Bake for 20 minutes, until a toothpick inserted into the center comes out clean. Cool the cupcakes on a wire rack.
6. Soak the cupcakes: Using a fork or wooden skewer, poke the tops of each cupcake. Brush or pour over a small amount of the coffee over each cupcake, and allow it to soak in.
7. Make the frosting: in a large bowl, beat mascarpone, powdered sugar, vanilla bean paste until smooth. Add heavy cream, instant vanilla pudding (optional) and whip to stiff peaks.
8. Transfer the frosting into a piping bag and pipe over the cupcakes.
9. Before serving dust with cocoa powder.
