Vegetable Shahi Pulao in a Smart Pot is a perfect one pot meal for those lazy laidback days when you wish to have something comforting but don't feel like standing in the kitchen for hours. Use the Smart Pot Eko and cook a wholesome meal for your family within 30-40 minutes including the preparation time. My go-to recipe for dinner during monsoon. Add lots of vegetables of your choice to make it more appealing and appetizing.


Ingredients:
3 tbsp desi ghee
1 tbsp cumin seeds
2 bay leaves
3 small cinnamon sticks
6-7 cloves
2 green cardamom, 1 black cardamom
2 pieces mace (javitri)
6-7 peppercorns
2 slices onions
2 tsp ginger garlic paste
2 chopped potatoes
1/2 cup peas
1 chopped capsicum
1/4 cup cauliflower florets
1/2 cup carrot
1/2 tsp turmeric powder
Salt and red chilli powder to taste
1/2 tsp garam masala
5 tbsp plain curd
2 cups soaked rice
2 cups water
Handful of coriander +for garnish

Method:
1) Turn on the Smart Pot Eko and bring it to the saute mode. Add desi ghee, once hot add the whole spices and saute for a minute
2) Add onions and ginger garlic paste. Cook tikl the onions turn golden
3) Add all the vegetables and saute for a minute
4) Add turmeric, salt, red chilli powder, garam masala and mix well. Add curd and mix
5) Add the soaked rice and water and mix everything well
6) Add a handful of coriander leaves and put on the lid of the smart pot
7) Rotate the valve to seal the lid. Select the pressure cooker mode and set timer to 10 minutes
8) Vegetable Shahi Pulao is ready .Serve hot garnished with coriander leaves.
