BANBERRY TARTS #thumbprintcookies
3 sticks Softened Butter (1-1/2 cups)
1 cup white Sugar
2 Eggs Yolks
1 teaspoon Vanilla Extract
4 cups pre-sifted All Purpose Flour
1 CUP of your favorite Seedless Red Jelly or jam (I use seedless raspberry or red plum)
Cream butter and sugar together with an electric mixer. Add yolks one at a time mixing each time to incorporate. Add vanilla. Add flour 1 cup at a time mixing between. Do not overmix dough to have a tender cookie. Preheat oven to 350 F. Scoop 1 Tablespoon sized dough onto a cookie sheet. Roll into balls and push down with your thumb to make a well in the center of the cookie dough. Makes about 62 cookies!
Stir about a cup of jelly to make it smooth and place into a sandwich bag. Snip a corner tip and pipe a bit into the thumbprints. Bake 15 to 17 minutes. Let cool a couple of minutes and transfer to a wire rack to cool completely. Pack in air tight containers. I truly don't know how long these will last because we eat them up in just a couple of days. They are that good!
