Kimmie Sewai is a delightful and traditional South Asian dessert made from fine vermicelli noodles, typically cooked in ghee and then simmered in a sweet syrup infused with cardamom, saffron, and other aromatic spices. It is often garnished with almonds, pistachios, and raisins, adding a rich texture and nutty flavor. Kimmie Sewai is loved for its fragrant aroma, rich taste, and the way it beautifully blends sweetness with a hint of spice, making it a truly indulgent treat.

Ingredients:

• Sewai thin (Vermicelli) - 250 gm

• Sugar - 750 gm

• Water - 1 cup

• Milk - 1 cup

• Green Cardamom - 5 pods

• Mixed Dry fruits - 1 cup

• Saffron strands - 10-12

• Food color (optional)

• Khoya (mawa) 250 gm

• Ghee 1/2 Cup

For Garnishing:

• Gold and Silver warq (edible silver and gold foils)

• Chopped dry fruits

• Khoya

Method:

• Take a deep cooking pot and add 2 tbsp of ghee.

• Fry the sewai (vermicelli) in the ghee for 2 minutes and then remove it from the pot.

• Fry the fox nuts and take them out.

• In the same pot, add Ghee 1 tbsp Cardmum saute 2 min add sugar and water to make a syrup. Add the fried sewai and mix well.

• Add milk, cover, and cook for 10 minutes in low heat.

• Open the cover and add khoya, chopped dry fruits, kewra water, food color, and saffron. Cover and leave it for another 5-10 minutes.

• Transfer the sewai into a serving bowl and garnish with silver warq, chopped dry fruits, and khoya.
