Tasting the extremely delicious Fiorentina steak, the unique tartare steak and the exciting Bollito all with Dario Cecchini, one of the most famous butchers in Italy and the world, at the Carna restaurant in Dubai. All this and more are parts of an exhilarating report that I am sure you will enjoy watching.

This time we came to the Carna restaurant on the 74th floor of SLS Hotel in Dubai to meet the famous Mr. Dario Cecchini. About six months ago, when I found out that he was coming to Dubai, I came to Dubai on a one-day trip from Tehran to see him and prepare a report.
Mr. Dario Cecchini, the famous Italian butcher, was born in 1955 in the village of Panzano in the Tuscany region of Florence, Italy. His family has been butchers for eight generations and an interesting thing is that he had not eaten steak until he was eighteen and only sold steak to rich families.
He studied veterinary medicine, but when they lost their father at a young age, he continued his father's work, which was butchery. Mr. Cecchini believes that all parts of meat can be used to prepare food if they are butchered and cooked properly. Dario behaves exactly like a surgeon because of the special care he has when cutting meat.

After arriving at the restaurant, we met with a warm welcome from Dario and his lovely wife. We chatted for a while. Before the report they let us in on an exciting secret at the Carna restaurant, which is located on the 74th floor of the SLS hotel. When we left the restaurant to go to the bathroom, there was another corridor behind a long mirror that led to a bar that looked like the bars back in the day. It had a very beautiful design and a spectacular view of Dubai, where different drinks were served from 5 in the evening until late, and they have live music on Thursdays, and DJs that played Latin American music on Fridays and Saturdays.
We went to the kitchen of Carna restaurant with Mr. Dario Cecchini and Dario decided to make two types of steak for us, the famous Fiorentina steak and Dario's tartare steak.
Fiorentina steak is a large, thick cut of beef or veal that is prepared on the grill. The next steak was Dario's tartare steak. Dario started pounding the fillet meat with a very interesting device called a tenderizer. It was very cool and professional to work with and it was very easy to spread the meat. He gave me one of these as a gift the last time I came. Then he started to chop the meat and mixed it with Dario's special olive oil, vegetable salt, garlic, paprika, parsley and olive oil, then chopped it again and put it on toasted bread. The interesting thing about this steak is that the meat is eaten raw. I must say that it was very, very tasty. I never thought that the taste would be so different and unique.
At eight o'clock in the evening, we returned to Carna to make a video of the butchery revolution with Dario Cecchini. In the middle of the restaurant, there was a special butcher's table where Dario cut the Fiorentina steak in a skillful and professional way and delighted all the customers and guests with his special trumpet. We started off with tartare steak and beet salad, and for dinner, they served us Fiorentina steak, which I have to say, tasted wonderful like a true masterpiece. We also had a special dish called bollito di dario, which has veal tail, veal tongue, veal cheek, and stomach which comes in some meat broth and salt. All these dishes were amazing, and we ended the night with a dessert called chocolate cow, which was very tasty.
