Dutch Oven Beef Roast with Potatoes and Carrots. Lodge Cast Iron Dutch Oven. Camp Cooking. We are using a Lodge Cast Iron Dutch Oven to cook a beef chuck roast. We fired the coals and heated the Dutch oven to sear the beef. We slow braised it and added potatoes, carrots, and onions. Once it was done, we made a gravy. This is a great way to cook a camping recipe in a classic Lodge Dutch oven.
