Drumstick soup

Ingredients
Drumsticks - 6-7 (cut into 3 inch pieces)
Water- 3 cups
Salt- 1 tsp

Method:-
- In a pressure cooker, add drumstick pieces along with salt and water, cover and cook till one whistle comes.
- Once done, keep the cooker aside to release its pressure completely.
- Now, strain the drumstick and keep its stock in a separate bowl.
- With the help of a spoon take out the pulp from drumsticks & divide into two parts. Keep aside.

For Drumstick Sorba
Ingredients
Oil- 1 tbsp
Garlic (sliced)- 3-4
Ginger (chopped)- 1 tsp
Green chillies (chopped) - 2-3
Drumstick pulp- ½ cup
Drumstick stock - 1 cup
Salt- to taste
Turmeric powder - ¼ tsp
Fresh coriander leaves (chopped)- 1 tbsp
Lemon wedge - 1

Method:-
- Heat oil in a sauce pan, add garlic and sauté till golden brown.
- Now, add ginger and saute for a minute.
- Add one part of the drumstick pulp along with chopped green chillies and sauté well.
- Season with salt and turmeric powder and mix well.
- Then, add drumstick stock and give a stir.
Let it simmer for couple of minutes over medium heat.
- Transfer the drumstick shorba into a soup plate and garnish with coriander leaves and squeeze a lemon wedge.
Here is your Indian style drumstick shorba is ready. Serve hot along with crispy roti topped with chopped onion and tomato.


For Cream of Drumstick Soup
Ingredients
Butter - 1 tbsp
Ginger-garlic paste - ½ tsp
Flour - 1 tbsp
Drumstick purée - ½ cup
Drumstick stock - 1 cup
Milk- 2 tbsp
Salt & pepper - to taste

Method:-
- Make a fine purée of the second part of the drumstick pulp and strain it. Keep aside.
- Melt butter in a saucepan, add ginger - garlic paste and sauté till the raw flavour of garlic disappears.
- Add flour and mix well.
- Add the prepared pulp of the drumstick and mix well.
- Now, gradually pour the stock and keep stirring to avoid any lumps.
- Add 2 tbsp of drumstick mixture in the milk to temper it. Mix well & pour it in saucepan. Give a stir.
- Let the soup simmer on low flame & season with salt & pepper. Stir well.
- Once done, transfer it to a soup bowl.
Here is your delicious cream of drumstick soup ready. Serve hot along with crispy croutons.
