Khichdi

Ingredients
Rice - ¼ cup (washed & drained)
Moong dal - ½ cup (washed & drained)
Ghee - 1 tbsp
Cumin seeds - 1 tsp
Cinnamon stick- 1
Turmeric powder - ½ tsp
Salt - to taste
Water - 3 cups

Thick curd (to serve along with khichdi)

Method:-
- Heat ghee in a pressure cooker over medium heat, add cumin seeds and let them splutter.
- Add a cinnamon stick and let it fragrant.
- Now, add moong along with rice dal & give a stir.
- Season with salt and turmeric powder. Sauté everything well.
- Add water and give a stir.
- Close the cooker with its lid and cook on high heat till the first whistle. Then lower the heat and cook till another 3 whistles. Switch off the flame and keep the cooker aside.
- Once the pressure releases naturally, open the lid and gently stir the khichdi.
- Pour in serving bowls and top with a layer of thick curd along with chatpati papad Churi.
Papad Churi recipe as follows:-

Papad Churi
Ingredients
Moong dal papad- 2
Ghee (melted)
Red chilli powder- ½ tsp
Coriander powder - a pinch
Chaat masala - a pinch
Salt- to taste

For Garnish
Fresh coriander leaves

Method:-
- Roast the papad well on an open fire.
- In a mixing bowl add melted ghee along with all the spices mentioned above & coriander leaves. Mix well
- Now, break the roasted papad in ghee mixture and toss everything together to combine well and papad gets coated with masala.
