The Makhan fish in Amritsar is the sort that fish fry dreams are made of! Lightly battered, spiced and marinated freshwater fish, singhara or sole, fried genty in cold-pressed mustard oil, the skin is crisp, almost wafer-like in its crunch, and the flesh, moist and buttery. Once you’ve tasted this fish fry, every other generic ‘Amritsari Machi’ comes a distant second, I discovered when I tasted the Makhan Fish of the Makhan Fish, Lawrence Road fame at Makhan Fish Hut on Old Jail Road! Confused? Well, there is more than one Makhan Fish in Amritsar, and that is something one observes with a few age-old eateries here, so as a visitor, one invariably depends on the counsel of the locals that guide you. So did I, and while I am still confused about which is the Makhan Fish to taste when in the city, I certainly enjoyed this rather unique fish fry.
