This video is how to cook Chaya mansa leaves safely .Chaya mansa /tree spinach/Mayan cheera /sugar cheera is king of all leafy vegetables.This is a native of Mexico so it is known as Mexican tree spinach.The leaves are rich source of protein calcium iron carotene vitamin A B C and antioxidants .Chaya mansa leaves are considered to be a nutritious leafy vegetable with several potential health benefits.Even though it is highly nutritious it contains toxicity hydrocyanic acid.To remove the toxicity wash the leaves and remove the white colour sticky milk like substance.Then adding water and cook in earthen pots or steel vessels for 10 to 15 minutes .Keep the vessel open and cook.After cooking squeeze and remove the whey water which contains toxins.Then you can use in curry or thoran.
Ingredients for preparing thoran
Finely chopped Chaya Mansa leaves add salt turmeric powder and water cook 10 minutes and remove the whey water(50 leaves)
Finely chopped onion 1
Garlic cloves 8
Green chilies 6 to 8
Mustard seeds as per need
Coconut oil
Grated coconut hand full
