Physical Labor Required
As the name implies this requires physically cutting down each plant by hand and transporting it to the next location.
However, this process can be incorporated into an operation that is also looking to do selective harvesting as a first step.

Manual Harvesting
For indoor growing this is likely the only option, but it is easier when plants are being grown in containers.
For outdoor growing it is like harvesting Christmas Trees from a field, which requires energy and the willingness to get dirty.

Common Procedure
Typically the plant will be cut at the ground level with heavy duty loppers.
This allows the entire plant to easily be handled and limits the need for unnecessary cuts.
Also, this helps hold the entire plant together for easy transport.

Forward Thinking
If you know you are going to be manually harvesting your crop at the end of the season this may influence what variety you select to plant.
Typically selecting smaller plants would be preferred to allow you to actually be able to handle them.
Excessively large plants may have high yields on paper, but the manual harvesting process will be difficult leading to increased plant damage and reduction in total end product.
