ingredients for the recipe (makes two hearty portions)
olive oil
1 celery stick finely chopped
1 carrot finely chopped
1 onion finely chopped
1 clove garlic (grated)
zest of one lemon (save the juice for garnish)
100g rice
500ml veg stock
half tin tomatoes
1 tbsp tomato paste
100g tempeh cut into bitesize pieces
100g peas
1 tbsp soy sauce / tamari
1 tsp liquid sweetener of choice
1/2 tsp smoked paprika
fresh parsley

method
mix a splash of oil with soy sauce, sweetener and smoked paprika. add in the tempeh - here's a good opportunity to let it marinate for 30 mins. bake for 12 mins at 180 degrees - turning halfway
add oil to a pan on medium heat then add the celery, carrot and onion and cook for 3 mins before adding the lemon zest and garlic for another 3 mins. next add the rice, stock, tomatoes and tomato paste. reduce to a low heat and cook for 45 mins. keep an eye on it, stirring occasionally.
2 mins before it's finished, add the peas and tempeh.
serve with fresh herbs of your choice and a squeeze of lemon juice.
