Shahi White Chicken Korma Recipe | Rich, Creamy & Delicious Mughlai Style
Indulge in this Shahi White Chicken Korma, a royal Mughlai delicacy that’s creamy, flavorful, and perfect for festive occasions or a special family dinner. The chicken is cooked in a rich, aromatic white gravy made with cream, yogurt, cashew paste, and fragrant spices – without using red chili powder for a mild yet indulgent taste.
This recipe is simple to make at home and tastes like it’s from a restaurant! Serve it with naan, paratha, or steamed basmati rice for a complete meal.
✅ Ingredients
1 kg chicken (cut into pieces)
1 cup yogurt (whisked)
½ cup fresh cream
2 tbsp cashew paste (soaked cashews blended with water)
2 tbsp ghee or butter
2 medium onions (finely sliced)
1 tbsp ginger-garlic paste
4-5 green cardamoms
4-5 cloves
1-inch cinnamon stick
1 bay leaf
½ tsp white pepper powder
½ tsp garam masala
1 tbsp kewra water or rose water (optional but gives aroma)
Salt to taste
Fresh coriander leaves for garnish
Saffron strands soaked in warm milk (optional for extra richness)
✅ Instructions
1. Fry the onions:
Heat ghee in a heavy-bottomed pan. Add the sliced onions and sauté until golden brown. Remove half for garnish later.
2. Cook the spices:
Add green cardamom, cloves, cinnamon, and bay leaf. Stir for a few seconds. Then add ginger-garlic paste and sauté until the raw smell disappears.
3. Add chicken:
Add the chicken pieces and sauté on high heat for 5–6 minutes until they turn white and are slightly cooked.
4. Add yogurt & paste:
Lower the flame and add whisked yogurt. Mix well and cook for 5 minutes. Add the cashew paste and stir to coat the chicken evenly.
5. Creamy touch:
Add fresh cream, white pepper powder, garam masala, and salt. Mix well and cover the pan. Let it cook on low heat for 20–25 minutes until the chicken is tender and flavors are absorbed.
6. Final aroma:
Add kewra or rose water and saffron milk (optional). Stir gently.
7. Garnish & serve:
Garnish with the reserved fried onions and chopped coriander leaves. Serve hot with naan, roti, or steamed rice.
