Ingredients:

5 eggs
1 medium-sized potato, peeled and finely chopped
2 small onions, finely chopped
3 small tomatoes, finely chopped
Green chilies, slit lengthwise (as per your preference)
2 tablespoons fresh cilantro or parsley, chopped
Salt and black pepper to taste
Vegetable oil for frying

Instructions:

Heat 1 tablespoon of vegetable oil in a frying pan over medium heat.
Add the finely chopped potato to the pan and fry for about 5 minutes, or until golden brown and crispy. Stir occasionally to ensure even cooking.
Sprinkle salt over the potatoes and mix well.
Add the finely chopped onions to the pan and sauté for 2 minutes until they become translucent.
Add the finely chopped tomatoes to the pan and cook for another 2 minutes until they become tender.
Sprinkle black pepper over the tomatoes and mix well.
Cover the pan with a lid and cook for an additional 2 minutes to allow the tomatoes to soften and blend with the other ingredients.
Remove the lid and spread the cooked mixture evenly in the pan.
Break the 5 eggs directly onto the mixture, ensuring even distribution.
Place the slit green chilies on top of the eggs.
Cover the pan with a lid and turn off the heat. Allow the residual heat to cook the eggs for about 2 minutes or until they are cooked to your desired level of doneness.
Once cooked, remove the lid and sprinkle salt and black pepper over the eggs.
Garnish with fresh chopped cilantro or parsley.
Serve the Afghani-style omelet hot with bread, such as naan or any other bread of your choice.
