Chicken wings claypot with taro and pumpkin

芋頭南瓜雞翼煲

材料:
急凍雞中翼12隻
芋頭400克
南瓜200克
椰漿100毫升
薑幾片

處理:
1. 雞翼,清水解凍。
2. 雞翼已解凍,倒去水分,加入粗鹽1湯匙,乸5分鐘,去除雪味、腥味,及加入少許鹹味。
3. 雞翼,清水沖洗乾淨,擎乾水,廚紙索乾。
4. 薑,去皮,洗乾淨。
5. 芋頭,去皮,清水洗乾淨。
6. 南瓜,去籽,清水洗乾淨。
7. 薑 ,切片。
8. 南瓜,切一舊舊。
9. 芋頭,一半切細舊,一半切細粒。

烹調:
1. 大火在鑊內燒熱油1湯匙。
2. 放雞翼煎香,轉中火。
3. 雞翼,煎了1分鐘,反轉煎1分鐘,放上碟。
4. 在鑊內加入油1湯匙,大火燒熱。
5. 放大塊芋頭煎香,加入薑片。
6. 加入芋頭粒及南瓜,炒勻。
7. 加入大滾水500毫升。
8. 加入調味料:
a. 鹽少許
b. 糖半茶匙
冚蓋,中慢火炆3分鐘。
9. 打開蓋,檢查一下大塊的芋頭可否給筷子穿過。
10. 轉大火,放雞翼落鑊,攪勻,冚蓋,炆3分鐘。
11. 加入椰漿3湯匙,攪勻。
12. 預備好煲仔。
13. 所有材料倒入煲仔內,大火滾起。
14. 完成,可享用。

Chicken wings claypot with taro and pumpkin

Ingredients:
Frozen chicken wings 12 Nos.
Taro 400g
Pumpkin 200g
Coconut milk 100ml
Ginger several slices

Preparation:
1. Chicken wings, defrost in tap water.
2. Chicken wings have been defrosted, pour away water. Season with 1 tbsp of cooking salt for 5 minutes, to remove unpleasant smells and add some salty tastes to them.
3. Chicken wings, rinse with tap water. Drain. Dry with kitchen towels.
4. Ginger, get it peeled. Rinse with tap water.
5. Taro, get it peeled. Rinse with tap water.
6. Pumpkin, remove seeds. Rinse with tap water.
7. Ginger, get it sliced.
8. Pumpkin, cut in pieces.
9. Taro, half is to be cut into small pieces. Half is to be diced in small cubes.

Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Put chicken wings, fry well.
3. Chicken wings, fry for a minute. Flip over and fry for another minute. Put on plate.
4. Add in 1 tbsp of oil in wok. Heat up at high flame.
5. Put big pieces of taro, fry well. Add in ginger slices.
6. Add in taro and pumpkin, fry well.
7. Add in 500ml of boiled-up water.
8. Add seasoning:
a. Salt little
b. Sugar 0.5 tsp
Cover up the wok. Braise at medium-low flame for 3 minutes.
9. Open the lid, check if the big taro pieces can be pinched through with a pair of chopsticks.
10. Turn to high flame. Put wings in wok. Stir well. Cover up the wok. Braise for 3 minutes.
11. Add in 3 tbsp of coconut milk, stir well.
12. Get ready for a pot.
13. Pour all ingredients into the pot, heat up at high flame.
14. Complete. Serve.
