Homemade Mango Passionfruit Ice Cream

Inspired by Østerberg CPH

Ingredients:
Base:
265g Cream
185g Skimmed Milk
100g Sugar
70g Skimmed Milk Powder
40g Sucrose Syrup
2 Egg Yolks
2g or 1tsp Locust bean Gum

Filling:
250g Diced Mango
Passion fruit to taste, we used the juice from 5 fruits without seeds.

The Machine we are using to churn the Gelato/ Ice Cream is a Musso 4080. It rotates with 80 rotations per minute whipping a lot of air into the Cream which gives it a very smooth and nice texture. Truth be told, we havent seen any IceCream storebought this good.. It is really amazing.
