Step-by-Step Recipe:
Ingredients:

2 tbsp cooking oil
3 cloves garlic, minced
1 medium onion, sliced
1/2 lb chicken meat, sliced
1/4 lb chicken liver, sliced
1 tsp ground pepper
1 cup baguio beans, sliced
1 large carrot, sliced
1/4 head cabbage, shredded
1 bell pepper, sliced
2 tbsp soy sauce
1 tbsp oyster sauce
1 chicken cube
1/2 pack pancit bihon (rice noodles)
1/2 pack pancit canton (egg noodles)
2 cups water

Instructions:

Prepare the pan: Heat 2 tbsp of cooking oil in a frying pan over medium heat. Add minced garlic and sliced onions. Stir until fragrant and onions become translucent.

Cook the chicken and liver: Add sliced chicken breast and chicken liver to the pan. Stir to combine, cover, and let it cook for about 5-7 minutes until the meat is tender.

Add spices and beans: Sprinkle ground pepper over the chicken mixture. Stir, then add the sliced baguio beans. Let it cook for another 3-5 minutes until the beans start to soften.

Add carrots and soy sauce: Toss in the julienned carrots and stir. Pour in 2 tbsp of soy sauce and stir to coat the vegetables. Cover the pan and let everything cook for 3 minutes.

Add cabbage, bell pepper, and oyster sauce: Mix in the shredded cabbage and sliced bell peppers. Stir thoroughly, then add 1 tbsp of oyster sauce. Cover the pan and cook for another 3 minutes, allowing the vegetables to absorb all the flavors.

Set aside the cooked vegetables and meat: Once fully cooked, transfer the chicken and vegetables to a plate. Set it aside for later.

Prepare the noodles: Using the same frying pan (with some sauce left), add 2 cups of water, 2 tbsp of soy sauce, and 1 chicken cube. Stir and cover the pot

until the mixture boils for about 3-5 minutes.

Cook the Pancit Bihon: Once the broth is boiling, add the pancit bihon (rice noodles). Stir to ensure the noodles absorb the broth, then cover and let it cook for 5-7 minutes or until the bihon is soft and tender.

Add Pancit Canton: After the bihon is cooked, add the pancit canton (egg noodles). Stir thoroughly, ensuring both types of noodles mix well together. Cover again and let it cook for another 3-5 minutes, until the pancit canton softens and absorbs the flavors.

Combine the cooked vegetables and meat: Now it’s time to bring everything together! Add the cooked chicken and vegetables back into the pot with the noodles. Stir everything until well combined, making sure all the noodles and veggies are evenly coated with the delicious sauce.

Serve and enjoy: Your Pancit Canton & Bihon is ready! Transfer to a serving dish and enjoy this amazing, flavorful Filipino noodle dish!
