3-4 cups hot water (adjust for desired consistency)

Instructions
Dry Roast the Dal:

In a dry pan, roast the moong dal on medium heat until lightly golden and aromatic. Set aside.
Prepare the Vegetables:

Heat 1 tbsp mustard oil in a large pot. Fry the cubed potatoes and cauliflower florets until lightly golden. Remove and set aside.
Temper the Spices:

In the same pot, add another tablespoon of mustard oil. Once hot, add the bay leaf, dry red chilies, and cumin seeds. Let them splutter.
Sauté Aromatics:

Add the ginger paste, chopped tomato, and slit green chilies. Cook until the tomato turns soft.
Add Spices and Lentils:
