Baked in a muffin pan, mini pumpkin cheesecakes are tied with my mini pumpkin pies for the most delicious and convenient pumpkin dessert! Each individual pumpkin cheesecake has a cinnamon graham cracker crust and a creamy pumpkin cheesecake filling with plenty of pumpkin spice.

You can serve these mini pumpkin spice cheesecakes as is, but I like to top them with vanilla whipped cream and a drizzle of salted caramel for an extra "wow" factor. The pumpkin cheesecake isn't too sweet on its own, so a drizzle of salted caramel really complements every bite—especially if you like your desserts on the sweeter side!
