✍🏻INGREDIENTS:
FOR GATTA:
* Gram Flour(बेसन) - 400-500 Gram
* Dried Fenugreek Leaves(कसूरी मेथी) - 1/2 Cup
* Dried Coriander Seeds(सूखा साबुत धनिया) - 2 Tbsp
* Cumin Seeds(जीरा) - 1 Tbsp
* Fennel Seeds(सौंफ) - 1 Tbsp
* Carom Seeds(अजवायन) - 1 Spoon
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Chili Powder(लाल मिर्च पाउडर) - 1 Spoon
* Turmeric Powder(हल्दी पाउडर) - 1/2 Spoon
* Salt(नमक) - 1 Spoon
* Asafoetida(हींग) - 1/2 Spoon
* Baking Soda(मीठा सोडा) - 1/4 Tsp
* Curd(दही) - 4 Tbsp
* Refined Oil(रिफाइंड तेल) - 3 Tbsp
* Water (पानी) - As Required
* Water(पानी) - For Boiling

FOR GRAVY:
* Soaked Poppy Seed(भीगे हुए खसखस) - 2 Tbsp
* Curd(दही) - 2-4 Spoon
* Curd(दही) - 1 Cup
* Turmeric Powder(हल्दी पाउडर) - 1/2 Spoon
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Red Chili Powder(लाल मिर्च पाउडर) - 1 Spoon
* Coriander Powder(धनिया पाउडर) - 1 Spoon
* Oil(तेल) - 1 Serving Spoon
* Crushed Masala(पिसा हुआ मसाला) - Some
* Green Chili(हरी मिर्च) - 2
* Ginger(अदरक) - 1 Spoon
* Garam Masala(गरम मसाला) - 1/2 Spoon
* Roasted Cumin Powder (भुना जीरा पाउडर) - 1/2 Spoon
* Coriander Powder(धनिया पाउडर) - Some
* Dried Fenugreek Leaves (कसूरी मेथी) - Some
* Fry Gatte(गट्टे)
* Boiled Gatta Water(गट्टा पानी) - 1+1/2 Glass
* Salt(नमक) - As Per Taste
* Coriander Leaves(धनिया पत्ती) - For Garnishing

✍🏻RECIPE:
For Masala, put Fennel Seeds, Coriander Seeds, Cumin Seeds, and Carom Seeds and crush them in a mortar pestle.
For Gattas, take some sieved Gram Flour in a Parat, put some Crushed Red Chilli Powder, Salt, Kashmiri Red Chili Powder, Turmeric Powder, Asafoetida, Baking Soda, Oil, and Curd in it and mix them all. Then bind the dough by adding water to it. Cover it, keep it aside for 10 mins, and keep some water for boiling. Apply some oil in your hands and make the rolls. Put the rolls in the boiling water and cover them for 10 mins, then take them out, let the rolls cool down, cut them into pieces, and fry all the Gattas.
For Gravy, put some oil in a pan, then put roasted & crushed Masala in it. Put some Asafoetida, grated Green Chilli, Ginger Then put the Curd Paste in it Turn the flame to medium and let it be cooked till it releases oil. Then put poppy seeds paste then put Garam Masala, Roasted Cumin Powder, Coriander Powder, and Dried Fenugreek Leaves & boiled water mix it & cook then put the fried Gattas in it. Cover it and cook it on a medium flame for 6-7 mins. Garnish it with some Coriander Leaves and serve it. In this way, Gatte Ki Sabzi will get ready.
