Gobi Pepper Fry Recipe:
Cauliflower (florets) - 1 no (small)
Hot Water - As Needed
Maida - ¼ Cup
Cornflour - ¼ Cup
Salt - ½ tsp
Kashmiri Red Chilli Powder - ½ tsp
Black Pepper Powder - ½ tsp
Water - 3 tbsp
Oil - For Deep-Frying
For Tossing:
Oil - 1 tbsp
Fennel Seeds - ¼ tsp
Garlic (finely chopped) - 1 tbsp
Curry Leaves - 2 Sprigs
Green Chilli (sliced) - 1 no
Onion (finely chopped) - ½ Cup
Turmeric Powder - ¼ tsp
Red Chilli Powder - ¼ tsp
Coriander Powder - ½ tsp
Black Pepper Powder - ½ tsp
Salt - ¼ tsp
Water - 3 tbsp
Lemon Juice - 1 tbsp
Coriander Leaves (finely chopped) -2 tbsp

Cooking Instructions:

1. Put the cauliflower florets into a bowl and cover with hot water. Cover with a lid and set aside for 5 minutes.

2. Drain the cauliflower and add it to a bowl. Add the maida, cornflour, salt, Kashmiri red chilli powder and salt. Mix until there is an even coating on the cauliflower pieces. Sprinkle water as required.

3. Heat oil in a pan and deep-fry the cauliflower on medium-high heat until golden brown. Remove and set aside.

4. Heat oil in a pan and add the fennel seeds, followed by the curry leaves, green chilli and onion. Saute until the onion turns translucent.

5. Add the powdered spices and salt. Saute for 1 minute, then add a splash of water.

6. Add the fried cauliflower and toss until evenly coated. Add lemon juice and coriander leaves, and give it a final toss.

Cooking Tips:

1. More black pepper powder can be added at the end, as per your preference, after tasting.
