In this video we take a full packer brisket and get it trimmed up and shaped leaving us with 13lbs of brisket to go on the grill. We season with a simple SPG mix and place it on the Traeger grill preheated to 185f with hickory pellets and enable super smoke. It goes overnight for 11 hours before we up the temp to 225F until we reach 175f internal around noon. We then wrap the brisket in pink non waxed butcher paper and cover it with rendered down fat trimmings (tallow) and up the temp to 275f until we reach an internal temp around 203f to 205f and it feels nice and tender. We then rest for 3 hours in the paper and wrap in foil at room temp. After it was fully rested we sliced on in and enjoyed that delicious, juicy, easy brisket we have been craving!

This method for me has been the easiest and best way to ensure a good result when cooking a whole brisket and its always done on time for dinner!
