Chatkhara Fried Chicken
Ingredients
• Chicken on Bones 1 - 1.5 kg
• Yogurt 6 tbsp
• Baisan (gram flour) 3 heaped
• Corn flour 3 heaped
• Ginger paste 1 tbsp
• Garlic paste 1 tbsp
• Chili flakes 3/4 tsp
• Chat masala 1 tsp
• Zeera powder 1.5 tsp heaped
• Garam masala 1.5 tsp heaped
• Dhania powder (coriander powder) 3 tsp heaped
• Paprika powder 2 tsp (or red chili powder to taste)
• Kala namak (Black salt) 1/3 tsp
• Ajwain 3/4 tsp, crushed in hands
• Salt to taste
• Fresh lemon juice 3 tbsp
• Red food color 1/2 tsp optional
Other
• Oil for deep frying
Preparation
1. Wash and drain the chicken properly. Make sure there is no water left in the chicken.
2. In a mixing bowl, add yogurt, baisan, corn flour and all the ingredients except red food color.
3. Mix the marinade well and add the chicken to it and coat the well.
4. Cover and allow to marinate in the refrigerator for at least 2 hours or preferably overnight.
5. To deep fry, heat the oil on high flame until fully heated.
6. Take the chicken out of the refrigerator and add red food color to it. Mix well.
7. Add the chicken pieces to the hot oil, one by one, and fry at high heat for 1-2 minutes. Then lower the flame to medium (not low) and fry for 7-8 minutes or more if the pieces are big.
8. Take out one piece and check if it is well cooked. If yes, take out all the chicken pieces and serve with mint chutney and some fries.

Crispy Crunchy Potato Fries
Ingredients
• Potatoes 3-4 big
• Plain flour 1/2 cup
• Corn flour 2 tbsp heaped
• Salt to taste
• Black pepper powder 1/4 tbsp
• Paprika powder 1 tbsp
• Onion powder 1 tbsp
• Garlic powder 1 tbsp
• Dried parsley 2 tbsp
• Water as needed
Other
• Oil for deep frying
Preparation
1. Peel and cut the potatoes in thick slices.
2. In a bowl, add plain flour, corn flour and all the other ingredients.
3. Add water to make a thin coating.
4. Heat oil in a pan to deep fry the potatoes. Coat the potatoes in the coating and add to the oil one by one.
5. Fry until golden and cooked from the inside.
6. Enjoy crispy, crunchy potatoes with ketchup or your favourite chutney.
7. Enjoy!
