Resep Rendang (untuk 40 porsi)

Bahan:
4 kg daging sapi sengkel
9 lembar daun salam
6 batang serai, geprek
15 lembar daun jeruk
130 gr gula merah
1,5 liter santan instan
1,5 liter air
2 sdm garam
2 sdm kaldu jamur / penyedap

Bahan bumbu halus:
36 siung bawang putih
30 siung bawang merah
350 gr cabai merah, potong
30 butir kemiri, geprek
40 gr jahe
60 gr lengkuas
1 sdm lada putih butir
3 sdm ketumbar
300 ml minyak
125 ml air

Pelengkap:
Nasi putih
Bawang goreng
Opor ayam
Sambal goreng ati
Ketupat

Langkah:
1. Iris lengkuas dan jahe, masukkan ke dalam blender beserta kemiri, bawang putih, ketumbar, lada putih, dan minyak, blender kemudian tambahkan air, blender hingga halus
2. Masukkan bumbu ke dalam wajan lalu di dalam blender yang sama masukkan cabai merah, bawang merah, minyak, dan air, haluskan kemudian tuang ke dalam wajan
3. Masak bumbu halus hingga wangi di api kecil kemudian potong-potong daging, sisihkan
4. Masukkan serai, daun salam, dan daun jeruk, masak di api sedang hingga wangi dan matang
5. Masukkan air, santan, daging, gula merah, garam, dan kaldu jamur, masak di api besar hingga mendidih lalu kecilkan api lanjut masak hingga empuk sekitar 2-3 jam
6. Rendang siap disajikan dengan pelengkap lainnya

Rendang Recipe (yield 40 servings)

Ingredients:
4 kg beef shank
9 pc bay leaf
6 pc lemongrass, pounded
15 pc kaffir lime leaf
130 g palm sugar
1.5 liter instant coconut milk
1.5 liter water
2 tbsp salt
2 tbsp mushroom powder / MSG

Spice ingredients:
36 clove garlic
30 pc shallot
350 g red chili, sliced
30 pc candlenut, pounded
40 g ginger
60 g galangal
1 tbsp whole white pepper
3 tbsp coriander
300 ml oil
125 ml water

Add-ons:
Rice
Fried shallot
Chicken Opor
Sambal Goreng Ati
Ketupat

Steps:
1. Slice the galangal and ginger. Add into the blender along with candlenuts, garlic, coriander, white pepper, and oil. Blend, then add water. Blend until smooth.
2. Pour the blended spices into the pan. Into the same blender, add red chili, fried shallot, oil, and water. Blend until smooth, then pour into the pan.
3. Cook the blended spices until fragrant on low heat. Slice the beef, set aside.
4. Add lemongrass, bay leaf, and lime leaf. Cook on medium heat until fragrant and cooked.
5. Add water, coconut milk, beef, palm sugar, and mushroom powder. Bring to a boil on high heat, then lower the heat. Continue cooking until the beef is tender, about 2-3 hours.
6. Rendang is ready to serve with the add-ons.
