Resep Empal Serundeng (untuk 8-9 porsi)

Bahan:
1,2 kg daging sapi topside
1,2 liter air
2 sdt garam
2 sdt kaldu bubuk
¼ sdt merica

Bahan lainnya:
100 gr kemiri
100 gr lengkuas, iris
80 gr gula merah
2 sdm air asam jawa
150 ml santan instan
4 batang serai, geprek, potong
6 lembar daun salam
4 lembar daun jeruk
1 sdt garam
1 sdm gula pasir
1 sdt kaldu bubuk
500 ml air
500 ml air kaldu sapi

Bahan bumbu halus:
15 siung bawang putih
18 buah bawang merah
3 cm jahe, iris
2 sdt ketumbar
½ butir pala
100 ml Minyak Goreng Fortune

Pelengkap:
Nasi putih Beras Premium Fortune
Bawang Goreng

Lainnya:
Minyak Goreng Fortune untuk menggoreng

Langkah:
1. Masukkan daging, air, garam, kaldu bubuk, dan merica ke dalam presto. Presto selama 30 menit
2. Dinginkan daging, potong-potong lalu pukul-pukul perlahan dengan ulekan batu atau rolling pin
3. Haluskan kemiri dengan food processor lalu sangrai hingga wangi dan sedikit kecokelatan, sisihkan
4. Haluskan lengkuas dengan sedikit air hingga halus, sisihkan
5. Blender bawang merah, bawang putih, jahe, ketumbar, pala, dan Minyak Goreng Fortune hingga halus
6. Tumis bumbu halus hingga wangi lalu masukkan serai, daun salam, dan daun jeruk, tumis kembali
7. Masukkan kemiri dan lengkuas, aduk rata masak di api kecil hingga wangi
8. Tambahkan air, santan, air asam jawa, gula merah, garam, gula pasir, kaldu bubuk, dan air kaldu sapi, aduk rata

Empal Serundeng Recipe (yield 8-9 servings)

Ingredients:
1.2 kg beef, topside
1.2 L water
2 tsp salt
2 tsp stock powder
¼ tsp pepper

Other ingredients:
100 g candlenuts
100 g galangal, sliced
80 g palm sugar
2 tbsp tamarind juice
150 ml instant coconut milk
4 pc lemongrass, pounded, sliced
6 pc bay leaf
4 pc kaffir lime leaf
1 tsp salt
1 tbsp sugar
1 tsp stock powder
500 ml water
500 ml beef stock

Blended Spices ingredients:
15 clove garlic
18 pc shallot
3 cm ginger, sliced
2 tsp coriander
½ pc nutmeg
100 ml Fortune Oil

Add-ons:
Fortune Premium Rice
Fried shallot

Others:
Fortune Oil to fry

Steps:
1. Add the meat, water, salt, stock powder, and pepper into the pressure cooker. Cook for 30 minutes.
2. Let the meat cool down. Slice and pound slowly with a stone pestle or a rolling pin.
3. Blend the candlenuts with a food processor, then toast it until fragrant and lightly browned. Set aside.
4. Blend the galangal with a bit of water until smooth. Set aside.
5. Blend the shallots, garlic, ginger, coriander, nutmeg, and Fortune Oil until smooth.
6. Sauté the blended spices until fragrant, then add lemongrass, bay leaf, and lime leaf. Continue cooking.
7. Add the candlenuts and galangal. Stir and cook on low heat until fragrant.
8. Add water, coconut milk, tamarind juice, palm sugar, salt, sugar, stock powder, and beef stock. Stir.
9. Add the meat in. Cook on medium heat until the liquid is reduced. Set the meat aside.
10. Continue cooking the leftover spices on medium-low heat until it’s reduced and becomes oily. Set aside.
11. Heat Fortune Oil and fry the meat until browned. Set aside.
12. Fry the Serundeng on medium-low heat until browned. Set aside.
13. Empal Serundeng is ready to serve with rice and fried shallots as a topping.
