This recipe is great topped with chopped cilantro, green onions, fried garlic, fried shallots, white pepper, fish sauce or soy sauce, siracha, chili oil, lime & sugar.

Ingredients needed:
For noodles:
4.5 cups boiling water
1 bag rice flour
1 bag tapioca starch/flour
For broth:
4-5 ginger slices
salt
MSG
chicken bouillon
raw chicken or rotisserie chicken

The most asked question I get is:
Can you freeze the noodles?
How do you freeze it?
How do you cook it after freezing? Mine always falls apart.
Do you thaw after freezing & before cooking?

Here’s the answer to all those questions. Whenever I make a big batch, and there’s leftover uncooked noodles, I just throw them into sandwich ziplock bags. Filling one bag is about 2-3 adult serving sizes. Throw it into your freezer. When you crave it, take it out, unzip the bag & put it in the microwave for about 30 seconds just until the big chunk of noodles is able to break apart into a few pieces (the noodles won’t be completely loose). Boil your water for the noodles & throw the noodles in when the pot comes to a full hard boil. DO NOT STIR. Throw the noodles in then let it boil for about 3-5 mins then gently stir with a chopstick to separate the noodles if they didn’t separate on their own already. Let it boil for another 5-6 full minutes then turn off your stove. After turning off your stove, let the noodles sit for another 5-10 mins so it can finish gently cooking with the stove off. After that, you serve how you usually do.
