For this vegan eggplant dish you'll need...

1 1/2 tablespoon olive oil
5 cloves garlic (smashed)
1/8 teaspoon black pepper
1/4 teaspoon cumin seeds
1 1/4 tablespoon curry powder
2 Bird's Eye Pepper
4 medium potatoes (Yukon Gold)
1 teaspoon Caribbean Green Seasoning
3 medium eggplant
3/4 teaspoon salt (adjust)
1 cup water (adjust)
1 tablespoon shado beni or cilantro (optional)
