大眼雞白菜豆腐湯
Pak choy tofu soup with big eye chicken fish

Fish soup, boil with veggies. Fish and veggies can be served with rice. Everyone like it.

麪豉豆瓣醬燜雞髀(快速做法)

材料:
急凍雞下髀4隻
雞蛋4隻
辣椒仔
蔥粒適量

處理:
1. 雞蛋,預先烚熟,清水沖乾淨,去殼,放碗內。
2. 雞髀,清水解凍。
3. 雞髀解凍後,倒去水分,加入粗鹽一茶匙,乸10分鐘,去除雪味、腥味,及加入少許鹹味。
4. 雞髀,揸出血水,清水沖洗乾淨,擎乾水,廚紙索乾。

烹調:
1. 預先煲滾清水500毫升。
2. 雞髀及雞蛋,放鑊內。
3. 加入調味料:
a. 豆瓣醬一湯匙
b. 黃豆醬一湯匙
c. 老抽一湯匙
d. 生抽一湯匙
e. 蠔油一湯匙
f. 冰糖一大粒
4. 加入大滾水500毫升,攪勻,大火滾起,轉中火,冚蓋,燜10分鐘。
5. 反轉雞髀,繼續燜10分鐘。
6. 放上辣椒仔及蔥粒。
7. 完成,可享用。

Braised chicken drumsticks with soybean paste and chili bean sauce (easy recipe)

Ingredients:
Frozen chicken drumsticks 4 Nos.
Eggs 4 Nos.
Chili
Green onion cubes appropriate amount

Preparation:
1. The eggs, boil well in advance. Rinse thoroughly. Remove shells. Put in a bowl.
2. Chicken drumsticks, defrost in tap water.
3. Chicken has been defrosted, pour away water. Add in 1 tsp of cooking salt, season for 10 minutes, to remove unpleasant smells and add some salty tastes to them.
4. The chicken, squeeze the blood. Rinse thoroughly. Drain. Dry with kitchen towels.

Steps:
1. Heat up 500ml of water at high flame in pot.
2. Put chicken and eggs in wok.
3. Add seasoning:
a. Chili bean sauce 1 tbsp
b. Soybean sauce 1 tbsp
c. Dark soya sauce 1 tbsp
d. Light soya sauce 1 tbsp
e. Oyster sauce 1 tbsp
f. Rock sugar 1 big cube
4. Add in 500ml of boiled-up water, mix well. Heat up at high flame, turn to medium flame. Cover up the wok. Braise for 10 minutes.
5. Flip over the chicken, continue to braise for 10 minutes.
6. Put chili and green onion on top.
7. Complete. Serve.
