Ingredients::

7 Dim/ Egg
1 Potato
1 Onion
2 Tomato
1 inch. Ginger
10 to 12. Garlic bulb
3 Tbsp. Mustard Oil

Spices::

1 Tsp. Turmeric Powder
1 Tsp. Red Chilli Powder
1 Tsp. Coriander Powder
1 Tsp. Cumin Powder
1 Tsp. Bengali Garam Masala Powder
1 Tsp. Salt or to taste

Tempering::

1 Bay Leaf
2 Dry Red Chilli
3 Green Cardamom
3 Clove

Method::

1. Take Water in a deep sauce pan and bring it to a boil.
2. Add ½ tsp. Salt to it.
3. Add eggs one by one and boil for 8 to 10 minutes.
All the eggs should be hard boiled.
4.Once boiled; switch the flame off and once you can handle remove the skin from the boiled eggs.
5. Marinate the eggs with ¼ tsp. each of Turmeric powder, Red Chili powder, Salt, and also mustard oil.
6.Meanwhile, peel the Potato(s) and cut them in dice.
7.Marinate the potatoes with ½ tsp. each of Turmeric powder, and also Salt.
8. Roughly chopped onion into thin slices.
9. Heat 3 Tbsp. Oil in a deep bottom pan and fry the eggs n potatoes on medium heat till those turn golden brown in color.
10.Once fried, strain the fried eggs from the pan. Keep aside.
11. Now add chopped onion and cook on medium flame till the onion is properly fried and brownish in color.
12. Add the roughly chopped Ginger and also garlic and mix thoroughly.
13. Cook for 2-3 minutes on low flame and add chopped tomatoes. Cook till the tomatoes soften.
14. Now strain all the veggies n keep aside to cold down.
15. Pour all the fried onion tomato Ginger garlic in a grinder, add 2 tbsp Yogurt n grind it. Yogurt will give a creamy texture.
16. Add this mixture to the pan and mix thoroughly.
17. At this point we will add potatoes n Egg to the masala mixture n sautéed very well.
18. Add 2 cups of water and bring it to a boil.
19. Now add all the dry masalas. Keep the flame on the lower side.
20. Cook till the potatoes are well-cooked. n cook till the gravy reaches desired consistency.
21.Add chopped coriander leaves n Garam Masala as well and give it a mix.
22. Cover it for a while.
23. Its ready to serve Bengali Dimer Dalna with hot steamed rice, or Pulao or Roti or Paratha or Luchi.
