Craving a delicious and healthy twist on bitter gourd? Try this Instant Karela nu Shaak recipe! This quick and easy Gujarati-style dish is perfect for everyday meals. While this recipe doesn’t include sugar, you can add it if you prefer to balance the bitterness of karela.

Ingredients:

Bitter Gourd / Karela (કારેલાં) - 300 gm
Kashmiri Red Chili Powder / કાશ્મીરી લાલ મરચું - 1 tablespoon
Garam Masala / ગરમ મસાલો - 1 teaspoon
Turmeric Powder / હળદર - 1 teaspoon
Coriander-Cumin Powder / ધાણા-જીરુ પાવડર - 1 tablespoon
Oil / તેલ - 2 tablespoons (for cooking)
Mustard Seeds / રાઈ - 1 teaspoon
Cumin Seeds (slightly powdered) / જીરુ - 1 teaspoon
Fennel Seeds (slightly powdered) / વરીયાળી - 1 teaspoon
Shredded Coconut / ઘસેલું નાળિયેર - 1 tablespoon
Sesame Seeds / તલ - 1 tablespoon
Salt / મીઠું - to taste (approx. 1 tablespoon)
Lemon Juice / લીંબુનો રસ - 1 teaspoon
Besan (Gram Flour) / બેસન - 2 tablespoons
Asafoetida / હીંગ - 1/4 teaspoon
Water / પાણી - as needed

For Tadka:
Oil / તેલ - 2 tablespoons
Coriander Seeds (slightly powdered) / ધાણા - 1 teaspoon
Cumin Seeds / જીરુ - 1 teaspoon
Fennel Seeds / વરીયાળી - 1 teaspoon
Fenugreek Seeds / મેથી - 1 teaspoon
Ajwain (Carom Seeds) / અજમો - 1/2 teaspoon
Asafoetida / હીંગ - 1/4 teaspoon

Note: I have not added sugar (ખાંડ) to this recipe, but you can add 1 teaspoon if needed to balance the flavors.
