Dhaba style Daal Chawal with potato cutlet

Ingredients:
Zeera Rice:
-Cooking oil 1/3 cup
-Sabut Kali mirch (Black pepper corns) 4-5
-Laung (Cloves) 3
-Zeera (Cumin seeds) ½ tbs
-Water 3glass
-Namak (Salt) 2 tsp or to taste
-Chawal (Rice) 2glass soaked for 30 mins
Dhaba style Daal:
-Water one liters
-Namak (Salt) 2 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Hari mirch (Green chilli) 2
-Lehsan (Garlic) cloves sliced 4
-Cooking oil 1 tbs
-Moong daal (Yellow lentil) soaked one cup
-Masoor daal (Red lentil) soaked one cup
-Urad Daal one cup
-Pyaz (Onion) sliced 2 small
-Tamatar (Tomato) chopped 3chopped small
-Hara dhania (Fresh coriander) chopped handful
-Hari mirch (Green chillies) 3
-Garam masala powder ½ tsp
-Nutmeg powder 1tsp
Tarka:
-Cooking oil 1/3 cup
-Lehsan (Garlic) chopped 4cloves
-Red chilli 1tsp
Quick Shami kabab:
-Alloo (Potatoes) boiled & cubes 5medium size
-Hari mirch (Green chillies) 2
-Hara dhania (Fresh coriander) chopped handful
-Pyaz (Onion) 2chopped
-Namak (Salt) 2 tsp or to taste
-Lal mirch (Red chilli) crushed 1tsp
-3bread slices
-Cornflour 2-3tablespoon
-Kasuri methi 1tablespoon
-Hara dhania (Fresh coriander) chopped

Directions:
Prepare Zeera Rice:
-In a pot add cooking oil, zeera , & mix well until fragrant.
-Add salt,red chilli, green chilli mix well
-Add rice, mix well add water & cook for 4-5 minutes.
-Turn the flame low, cover the pot with kitchen towel, place lid & steam cook for 5 minutes on high flame and 10mins on low flame.
Prepare Dhaba style Daal:
-In a pot add oil and onion garlic
-Add tomatoes and green chillies
-Add salt, red chilli powder, turmeric powder.
-Add lentils and add water one liter . Cover partially & cook on medium low flame for 40-45 minutes or until lentils are tender.or wait in cooker for 6-8mins.
-Mash well with the help of wooden masher.
-Add fresh coriander, green chillies & mix well.
-Add garam masala powder & mix well.
Prepare Tarka:
-In a frying pan add cooking & heat it.
-Add garlic & mix well.
-Add red chillies, green chillies mix well & sauté for 1-2 minute.
-Add prepared tarka in daal, mix well, cover & set aside.
Prepare Quick potato cutlet
-In a chopper add boiled potato, green chillies, mint leaves, fresh coriander, onion,salt, bread slices, cornflour red chilli crushed & chop well until combined.
-Grease hands with cooking oil & make patties of mixture (makes 14-15).
-Heat oil in a frying pan, dip shami kababs in whisked egg & fry shami kababs on medium flame until golden from both sides.
-Dish out rice, daal, garnish with fresh coriander, kababs & serve with salad.
